Why do my knits look like purls?

The most likely culprit is that you are wrapping your yarn the wrong way around your needle on either the knit side, the purl side, or both. You should always wrap the yarn counterclockwise around your needle.

How do you pick up more stitches than rows?

More stitches than the number along a finished edge

In the same way as your first stitch, wrap the working yarn around your needle and pull through to create a stitch. Not unlike a standard increase stitch, you will have now created two new stitches from one stitch.
